Beef Strips Dry-fry Recipe
This is a new way to cook beef – dry fry beef, less oil, more healthy, enjoy this traditional Chinese food !

Utensils:
Mixing bowl, wok, serving plate.
Serves: 2
Ingredients:
14 oz. / 400 g beef, cut into 1-2 inches strips
7 oz. / 200 g celery
3 slices ginger root, cut into thin strips
1-2 tbsps. Szechuan peppercorns, mashed
1 tbsp. Chinese cooking wine, or dry sherry
1-2 tbsp. Chili bean sauce
1 tbsp. light soy sauce
1 tbsp. sesame oil
1 tbsp. rice vinegar
1 tbsp. salt, or to taste
1 tbsp. sugar, or to taste
4 tbsps. vegetable oil, for stir-frying
Directions:
1. Rinse the celery thoroughly under cold running water, remove any dirt or sand, then cut into 1-2 inches sections.
2. Combine beef strips with Chinese cooking wine in a big mixing bowl, let them marinate for about 30 minutes.
3. Preheat a wok over high heat for 1 minute before adding 2 tbsps. vegetable oil, heat until the oil is hot, then stir fry beef strips over medium high heat for 1-2 minutes, remove beef to a plate for later use then.

4. Add another 2 tbsps. vegetable oil into the wok in question, put beef back and stir over medium high heat for 1 minute, season with salt, add chili bean sauce, ginger strips, sugar, and light soy sauce, stir briefly until mixed well, about 30 seconds.
5. At last, put celery back, stir fry for 1 minute, then drizzle with sesame oil and rice vinegar, sprikle with mashed peppercorns, stir fry everything until cooked.
6. Dish out onto a plate, serve hot.
