Ketchup Filet Mignon Stir-fry Recipe
Coated with a quick ketchup sauce burst with flavor, ketchup filet mignon stir-fry recipe can be an easy, family-favorite dinner.

Ingredients:
7 oz. / 200 g filet mignon, cut into thin strips
1 stalk scallion, chopped fine
1 ginger slice, minced
2 garlic sloves, sliced
1 tbsp. ketchup
2 tbsps. cornstarch
2 tbsps. white sugar
1 tbsp. flour
1 tsp. salt
5 tbsps. vegetable oil for stir fry
Marinade:
1 tbsp. ground Szechuan peppercorn
1 tbsp. Chinese rice wine, or dry sherry
1 tbsp. white sugar
1 tsp. salt, or to taste
Directions:
1. Combine filet mignon with the marinade in a bowl, mix well and let them marinate for about 30 minutes.
2. Combine 1 tbsp. cornstarch, 1 tbsp. flour, with 4 tbsps. water in a separate bowl, blend well until smooth, the batter should be thick, coat each filet mignon with the batter lightly then.

3. Preheat a wok over medium high heat for 1 minute before adding 5 tbsps. vegetable oil, heat until it is shimmering on the bottom and very hot, but not yet smoking, add the coated filet mignon, do not crowd the wok, deep fry over medium heat, until nicely browned, then drain well in a colander, and dry on kitchen papers, transfer to a plate.


4. Whisk 1 tbsp. ketchup, 2 tbsps. white sugar, 1 tsp. salt, and drops water in a separate bowl, set aside for later use. In another bowl, mix 1 tbsp. cornstarch with 4 tbsps. water for thickener.
5. Pour off the excess oil from the wok, leaving about 2 tbsps. oil in the wok, heat until hot, saute chopped scallion, garlice and ginger briefly until aromatic, abour 30 seconds.
6. Then reduce to low heat, pour into the ketchup sauce mixture and stirring, swirl into the cornstarch-water mixture 1 minute later and cook.
7. At the last minute of cooking, place the cooked filet mignon back into the wok, tossing to coat the sauce lightly.
8. Turn off the heat and serve on a plate immediately.
