Spicy Beans and Beef Stew Recipe
The best way to enjoy leftover beef in this classic Chinese spicy beans and beef stew recipe, the beef are tender and full-flavored after the gentle simmer, mouth-watering indeed.

Serves 2
Ingredients:
1 tbsp. shredded cheese
1 can soaked beans
1 tbsp. chopped scallion
7 oz. / 200 g ground beef in equal measure
1 onion, peeled, cut into small cubes, about 1/2-inch length
1 can diced tomatoes, or 1 tomato, cut into 1-inch small cubes

Seasonings:
2 tbsps. chili powder
2 tbsps. ketchup
2 tbsps. ground cumin
2 tbsps. vanilla extract
1 tbsps. salt, or to taste
1/2 cup wine
Directions:
1. Preheat a wok over medium high heat for 30 seconds before adding ground meat, stir fry just until the meat turns white, do not brown, add onion cubes and cook until soften, about 2 minutes.

2. Add 1/2 cup wine while cooking, then tomato cubes, and other seasonings, stirring and tossing over medium high heat until well mixed.

3. Then add beans and 1/2-1 cup water or chicken stock, bring to a gentle boil, then reduce heat to simmer, simmer until the beans are tender.


4. Ladle into warmed bowls when cooked, top with a sprinkling of cheese and chopped scallion before serving if desired.
