Crispy Chicken Tofu Pie
What better ways to enjoy chicken and tofu, than in this delicious chicken tofu pie? Give it a go.

Prep time: 20 minutes
Cook time: 5 minutes
Utensils:
Oven, kitchen paper, cleaver/spoon, bowl, 2 serving plates.
Serves 2
Ingredients:
2 oz./ 40 g dried cloud ears
7oz./ 200 g chicken breast, shredded into small pieces
1 block firm tofu, about 7oz./ 200 g, cut into cubes, drained before use (please refer to the tips below)
2 slices fresh ginger, minced
Cheese, as needed
1 bunch scallion, finely chopped
3 crushed garlic cloves
1 tsp. sesame oil
1 tsp. ground black pepper
1 tsp. white sugar
1 tsp. salt, or to taste
Directions:
1. Drain tofu according to the tips, meanwhile, soaked dried cloud ears in warm water for about 20 minutes, cut into small pieces then.
2. Mash tofu cubes with the side of a cleaver or the back of a spoon, stir into all the other ingredients and seasonings except cheese, stir to mix well.

3. Pour the mixture evenly into a baking tray, sprinkle over a layer of cheese. Then bake about 3-8 minutes, or until cheese melts and color turns yellow.



4. Remove from the oven, cut and arrange on a serving plate, when cool enough to handle, serve.

Tips:
How to drain tofu before using:
1. Cut tofu into uniform size pieces.
2. Lay a kitchen paper out on a big serving plate, arrange tofu cubes on it neatly, then cover another kitchen paper on them.
3. At last, put a book or any other heavy things on it, let sit for 20 minutes until needed.
4. During this period, you may find water leeks out of tofu, don't worry, just drain it by tiltting the plate if needed.
