Crispy Mushroom Recipe
This crispy mushroom features a great combination of crispy crust and juicy mushroom. It is easy to make at home, so there is no need to go out to enjoy this delicious Chinese classic.

Wok, bowl, colander, kitchen papers, serving plate.
Serves 2
Ingredients:
3 tbsps. flour
3.5 oz./100 g mushroom, shredded
1 tbsp. minced ginger
1 tsp. salt, or to taste
1 tbsp. chopped scallion
1 tbsp. chicken essence
1 tbsp. ground black pepper
5 tbsps. vegetable oil for deep-frying

Directions:
1. Combine 3 tbsps. flour, 1 tbsp. chicken essence, 1 tbsp. ground black pepper, 1 tsp. salt, and 1-2 tbsps. water in a bowl, blend well to make a batter.
2. Dredge the mushroom shreds lightly in the batter.

3. Place a wok over medium heat, heat 5 tbsps. vegetable oil until shimmering on the bottom and very hot, but not yet smoking, deep fry the mushrooms over medium heat, do not crowd the pan.

4. When the mushroom shreds turn golden brown, turn off the heat, drain thoroughly in a colander, dry on kitchen papers.
5. Serve on a plate.
