Easy Sweet Potato Pie
This sweet potato pie recipe is a great example of how just a couple of ingredients make a sweety and crispy pie. Crispy sweet Potato pie is ready to coat with your favorite sauce.

Cook time: 20 minutes.
Utensils:
Bowl, non-stick skillet, spatula, serving plate.
Serves 2
Ingredients:
1 sweet potato, about 14 oz.
1 tsp. white sugar, or to taste
Proper quantity of glutinous rice flour
2-3 tbsps. vegetable oil
1 cup water
Directions:
1. Rinse sweet potato through running water, peel and cut into small cubes, then put into a bowl, add 1 cup water just covers the surface of the cubes.

2. Cover the bowl with waxed paper and place in microwave oven, cook over high heat for about 10 minutes.

3. When done, remove from the oven and smash with a spoon, taste and add sugar as you would.

4. Toss pinch of glutinous rice flour into the paste bowl gradually, mix well with a spoon, when the mixture becomes sticky, roll it into a flat bread.


5. Add 2-3 tbsps. vegetable oil to a non-stick skillet, heat over medium-high heat till hot, lay on the dough and pan fry 2-3 minutes per side, or until golden brown.

6. Remove from the heat to a serving plate, let cool 2 minutes before serving, serve with your favorite sauce if desired.
