Egg Beef Roll Recipe

Ingredients:
4 hard-boiled eggs, peeled
5 oz./ 150g beef, cut into 1/8-inch thick and 3-inches long slices
2 tbsps. vegetable oil for pan-frying
1 tbsp. brown sugar
1 tbsp. light soy sauce

Directions:
1. Wrap 2 beef slices around each egg tightly according to the picture.

2. Heat 2 tbsps. vegetable oil in a wok over high heat, when the oil is hot, pan-fry egg beef rolls over medium high heat, wrinkled and lightly browned through, which will take about 5 minutes.

3. Add 1 tbsp. light soy sauce, 1 tbsp. brown sugar and 1/3 cup water, stirring and tossing continually, ensures that sauce covers egg beef rolls evenly, then reduce heat to low, simmer until the sauce thickens and is nearly reduced.
4. Remove to a plate and serve hot.
