Five-spice Beef Pudding Recipe

Ingredients:
18 oz. / 500 g beef tenderloin
2 garlic cloves
2 star anises
1 cinnamon
1 tbsp. Szechuan peppercorns
1 tbsp. chicken essence
4 slices ginger root, peeled
1 stalk scallion, cut into 1-inch sections
Seasonings:
1 tbsp. Chinese rice wine, or dry sherry
1 tbsp. light soy sauce
1 tbsp. white sugar
Directions:
1. Rinse beef tenderloin well, then blanch for about 2 minutes in boiling water, drain well in a colander then.

2. Cut the blanched beef into 1/3-inch length and put into a pot, add enough water (must be 1-inch higher than the surface of the beef tenderloin), then add the rest of the ingredients and all the seasonings, cover and cook over high heat for 30 minutes, then reduce heat to low and let simmer for another 3 hours.

3. After cooking, use a wire strainer to discard the star anises, garlic cloves, cinnamon, ginger, wild pepper, and scallion. Then add 1 tbsp. chicken essence and mix everything well.
4. Remove them to a big bowl, and place in the refrigerator for 1-3 hours until looks like a pudding.

5. When serving, remove them to a cutting board, cut into thin strips and arrange neatly on a plate, serve.
