Golden Pancake Recipe
This golden pancake is one kind of the most famous Chinese food, one taste of this crunch, tasty and delicious pancake, and you'll know why it's such a favorite.

Utensils:
Frying pan/wok, rolling pole, big basin, serving plate.
Serves 3
Ingredients:
17 oz./ 500 g flour
1/2 cup water
4 tbsps. chopped scallion
2 tbsps. salt, or to taste
4 tbsps. vegetable oil for stir-frying
Directions:
1. Add flour in a big basin, drizzle 1/2 cup water in occasionally, use both of your hands to make dough, knead the dough for 3-5 minutes.

2. Separate the dough into 4 parts. Use a rolling pole to roll out respectively, spread pinch of salt over it evenly, then brush 1 tsp. vegetable oil on each, sprinkle 1 tbsp. chopped scallion on each.

3. Fold each up and roll out.

4. Repeat the former step for 4-5 times or more as you would.

5. In a non-stick frying pan, add 1-2 tsps. vegetable oil and swirl it around the pan, heat until hot, pan fry each pancake separately over lowest heat until bothsides turns out golden brown, about 3-5 minutes.

6. Dish out onto a plate and serve hot.
Tips:
1. At step 3&4, you'd better toss pinch of flour on the dough to prevent it from sticking.
2. At step 3, the more you fold, the more layers you will get.
