Honey Glazed Yam Recipe

Ingredients:
17 oz./ 500 g yams
5 oz./ 150 g white sugar
2 tbsps. honey liquid
1 tbsp. chili bean sauce
Enough vegetable oil for deep-frying
Directions:
1. Rinse the yams and peel well, cut into thin 1-inch length and 1/2-inch width strips, soak in water before needed.
2. Preheat a wok over high for 1 minute before adding enough vegetable oil, heat till the oil is hot, deep fry yam until yellow, drain well and set aside for later use.

3. Pour 1/2 cup water into a separate wok, add white sugar, cook until melts.
4. When the sugar thickens, add yam strips, then 1 tbsp. chili bean sauce and 2 tbsps. honey liquid, stirring and tossing to mix everything together, cook about 2 minutes, or until cooked.
5. Arrange neatly on a serving plate, serve hot.
