Spicy Horsebean Recipe

Serves 2
Ingredients:
7oz./ 200 g horsebean
3 slices fresh ginger, minced
1 tbsp. chopped scallion
4 cloves crushed garlic
2 red bell peppers, chopped fine
2 tbsps. wild pepper, smashed
2 tbsps. vegetable oil for stir-frying
1 tbsp. light soy sauce, low-sodium
1 tbsp. rice vinegar
1 tsp. sugar, or to taste
1 tsp. salt, or to taste

Directions:
1. Preheat a large wok over medium-high heat for 1 minute, stir fry the horsebean for 2-3 minutes, or until golden.

2. Pour 5-8 cups water into the wok in which it was cooked, simmer for 30 minutes over low heat, until the horsebeans are tender. Drain well in a colander and remove to a serving plate.


3. Preheat a skillet over medium-high flame for 1 minute before adding 2 tbsps. vegetable oil, heat until hot, saute scallion, ginger, garlic and chopped red bell peppers briefly, about 30 seconds, then spoon over the horsebean.
4. Add wild pepper and all the seasonings to the horsebean, stir to mix everything together, serve then.

Tips:
1. Before you cook red bell pepper, you'd better soak them in water for about 5 minutes, which can prevent burnt while cooking.
2. For a bit spicy version, add more chili powder or chili bean sauce along with red bell peppers.
