Crispy Lotus Ginger Recipe
This crispy lotus ginger recipe is a great example of how ginger and lemon really enhance the flavor of lotus. It only has a couple of easy-to-get ingredients, but the finished one is a deliciously different course.

Utensils:
Pot, colander, 2 mixing bowls, serving plate.
Serves 2
Ingredients:
4 lemon wedges
1 tbsp. sesame oil
1 lotus root (about 7 oz.), peeled
1-2 fresh ginger root, peeled, cut into small pieces
1 red hot pepper, finely chopped
1 tbsp. light soy sauce
1-2 tbsps. rice vinegar
1 tsp. salt, or to taste
Directions:
1. Rinse lotus root thoroughly through running water, drain well, then slice according to the picture.

2. Add all the seasonings in a small bowl for sauce.
3. Bring a large pot of water to a boil, blanch the lotus root slices for 30 seconds, then drain well and rinse through cold running water to stop the cooking. Drain well and place to a mixing bowl, drizzle over the sauce lightly.


4. Remove them to a serving plate, sprinkle with minced ginger root and chopped red hot peppers, mix well, garnish with lemon wedges, let refrigerator for 20-30 minutes before serving.

Tips:
1. When blanching, for the sake of crispy, don't make it too long.
