Miso Paste Red Pepper Salad Recipe

Ingredients:
2 tbsps. miso paste
2 tbsps. sesame oil
2 red peppers, stemmed
1 stalk scallion, chopped fine
2 tbsp. toasted sesame seeds
Directions:
1. Blend the miso paste, sesame oil, and sesame seeds together in a bowl for sauce, set aside.
2. Cut red peppers lengthwise into half, remove the seeds, then cut diagonally into 1-2-inches strips.
3. Put a pot of water over high heat till boiling, parboil red pepper strips until it is just tender, about 1 minute, then drain and remove to a separate bowl.
4. Pour the sauce over the red pepper strips, mix to properly coat, top with a sprinkling of chopped scallion before serving.
