Crispy Mushroom Deep-fry Recipe

Wok, bowl, colander, kitchen papers, serving plate.

Ingredients:
3.5 oz./ 100 g mushroom, shredded
1 tbsp. chopped scallion
3 tbsps. flour
1 tbsp. minced ginger
1 tbsp. ground black pepper
1 tbsp. chicken essence
1 tsp. salt, or to taste
5 tbsps. vegetable oil for deep-frying

Directions:
1. In a big mixing bowl, combine 3 tbsps. flour, 1 tbsp. chicken essence, 1 tbsp. ground black pepper, 1 tsp. salt, and 1-2 tbsps. water, blend well to make a batter.
2. Dredge the mushroom shreds lightly in the batter.

3. Heat 5 tbsps. vegetable oil in a wok until shimmering on the bottom and very hot, but not yet smoking, add the mushrooms, do not crowd the wok, deep fry over medium heat.

4. When the mushroom shreds turn golden brown, turn off the heat, and then drain thoroughly in a colander, dry them on kitchen papers then.
5. Let cool a few minutes before serving.
