Crispy Potato Balls Recipe
Crispy potato balls is as comforting as it is simple, it is an easy-to-make Chinese cooking, also a delicious way to break the boring potato routine.

Serves 2
Ingredients:
3 middle-sized potatoes
1 tbsp. chicken essence
1 tbsp. chopped scallion
1/2 cup flour
1 tbsp. butter
1 beaten egg, lightly whisked
1 tsp. salt, or to taste
5 tbsps. vgetable oil for deep-frying
Directions:
1. Rinse the potatoes well, then cook in boiling water until done, peel and mash into paste with the back of a spoon, transfer to a bowl.
2. Stir into 1 tsp. salt, 1 tbsp. chopped scallion, 1 tbsp. chicken essence, and 1 tbsp. butter until blended well.

3. Form the paste into tiny balls of 2-inches diameter, place on a plate.

4. Make batter by whisking whisked egg with 1/2 cup flour, the batter should be thick, then coat each potato balls with it lightly.
5. Heat 5 tbsps. vegetable oil in a wok over high heat until it is shimmering on the bottom and very hot, but not yet smoking, deep fry potato balls over medium high heat until golden-brown.

6. Drain in a colander and then dry on kitchen papers, coat with your favorite sauce for a mouthwatering treat.
