Easy Potato Strips Pie

Ingredients:
1/2 cup flour
2 beaten eggs, whisked lightly
1 potato, skinned, cut into matchstick-sized thin strips
1 tbsp. chopped scallion
1 tbsp. ground black pepper
1 tsp. salt ,or to taste
3 tbsps. vegetable oil for pan-frying

Directions:
1. In a big mixing bowl, combine potato strips, egg mixture, chopped scallion, 1/2 cup flour, ground black pepper, and salt together, stir to mix well.

2. Preheat a wok over medium-high heat for 30 seconds, then add oil and swirling along the sides, pour into the potato mixture when the oil is hot, pan frying over medium heat until each side turns golden and cooked through.

3. When finished, let it cool completely in the wok before you cut, then serve.
