Shrimp and Avocado Salad
If you are in the mood for a nutritious and tasty Chinese salad dish, then the perfect shrimp and avocado salad will satisfy your stomach.

Serves 2
Ingredients:
1/2 cup shrimp, peeled, deveined, parboiled
1 avocado, peeled, cut into 1-inch cubes
1 tbsp. hot mustard
1 tbsp. light soy sauce
2 tbsps. lemon juice
Directions:
1. Put a pot of water on to a boil, parboil the shrimp meat for about 1-2 minutes.

2. Make the dressing by whisking all the seasonings together in a bowl.

3. Put the avocado cubes and shrimp in a separate bowl, spoon the dressing over, and then combine to properly coat with the sauce.
4. Serve immediately.
