Snow Peas and Corn Meal Pancake Recipe
The name says it all, this is a snow peas and corn meal recipe for true corn lovers. It is very light, but not lacking in great taste.

Prep time: 5 minutes
Cook time: 15 minutes
Utensils:
Wok, mixing bowl, serving plate.
Serves 2
Ingredients:
1 cup corn meal
1/2 cup snow peas
1 egg, beaten, whisked lightly
1 tbsp. ground black pepper
1 tbsp. chopped scallion
1 tsp.salt, or to taste
Directions:
1. Cook the snow peas in boiling water until done, drain well and chop into small pieces, set aside.
2. Combine with all the other ingredients in a mixing bowl, stir until sticky.


3. Divide the mixture into 4 parts, in the meantime, heat a wok with 2 tbsps. vegetable oil until hot, place them into the hot wok, pan-fry over medium heat.

4. Turn and cook the other side when turns golden-brown.

5. When finished, serve on a plate.
