Sweet Red Pepper Beef Pie
This Chinese food recipe combines 3 family favorites-beef, egg, and sweet red pepper-for an easy, delicious dish, it is best enjoyed medium-rare, like any great recipes, and the sweet red pepper is perfect with the fragrant beef.

Serves 2
Ingredinets:
1-2 cups ground beef
1 beaten egg
2-5 sweet red pepper
1 tbsp. chopped scallion
1 medium size eggplant, peeled, cut into small cubes
1 tbsp. ground black pepper
1 tbsp. light soy sauce,low sodium
1 tbsp. salt, or to taste
Directions:
1. Put a large pot of water on to a boil, parboil the eggplant cubes over medium heat for 2 minutes, or until tender.
2. Drain them well in a colander, then chop into small pieces, squeeze out excess water, combine with all the ingredients and seasonings except sweet red peppers in a big mixing bowl, stir to mix everything well.

3. Trim off the stems of the sweet red peppers, then cut lengthwise in half, place some meat mixture into each one with a spoon.

4. Preheat the oven to 375 Degree F, bake them until completely heated through and golden crispy on top, typically anywhere from 6 to 10 minutes.
5. Remove from the oven to a plate, when cool enough to handle, serve with your favorite sauce if desired.
