Veggies Walnut Meat Recipe
Snow peas, onion, carrot, walnut meat, and green pepper are all you need in this delicious recipe, this Chinese recipe is fully flavored and works every time.

Serves 2
Ingredients:
1/3 snow peas
1 onion, peeled, cut into 1/2 inch cubes
3 tbsps. walnut-meat, cut into pieces
1/2 cup sweet potato cubes, about 1/2-inch length
1 green pepper, diced
1/2 cup carrot cubes, about 1/2-inch length
1 tsp. salt, or to taste
1 tbsp. ground black pepper
2 tbsps. vegetable oil for stir-frying
Directions:
1. In a wok, heat 2 tbsps. vegetable oil until hot, saute onion cubes until aromatic, about 30 seconds, then stir fry walnut meat over high heat for 1 minute.

2. Add all the other ingredients back into the wok in which it was cooked, sprinkle salt and black pepper as you stir fry.

3. Reduce to low heat, add 1-2 tbsps. water, cover and cook until all the vegetables are set.
4. Serve on a plate.
