Bitter melon Egg Stir-fry Recipe

Ingredients:
2 eggs, beat in a bowl, whisked lightly
1 bitter melon, scoop out the seeds, sliced well
1 tbsp. chopped scallion
1-2 tsp. salt, or to taste
1-2 tsp. chili bean sauce
2-4 tbsps. vegetable oil for stir-frying

Directions:
1. Bring a large pot of water to a boil, blanch bitter melon slices for 1-2 minutes, until the color turns jade green. Drain well and set aside.

2. Preheat the wok over medium high heat for about 2 minutes before adding 2 tbsps. vegetable oil, when hot, saute scallion until aromatic, about 20 seconds, swirl into the egg mixture, stir fry over medium heat until egg have set, remove from the wok to a plate for later use.

3. Add another 2 tbsps. vegetable oil in the wok, heat till hot, stir fry blanched bitter melon slices over medium heat until soft, about 1-2 minutes.

4. Put cooked egg back into the wok, continue to cook, then add chili bean sauce, correct for salt when nears done.

5. Serve on a plate.
