Bitter Melon Shrimp Egg Pie

Ingredients:
1/2 bitter melon, seeded, cut into thin strips
1/2 cup shrimp meats
1 large raw egg, beaten, whisked lightly with pinch of salt in a bowl
2 tbsps. vegetable oil for stir-frying

Directions:
1. Blanch the bitter melon strips in boiling water for about 30-60 seconds, or until jade green, drain and then remove to cold water to stop cooking, then drian well and set aside for later use.
2. In a wok, add 2 tbsps. vegetable oil over high heat, swirl the oil around the wok, add balsam pear strips and shrimp meat when the oil is hot, cook over high heat until shrimp turns pink, which will take about 1-2 minutes, then reduce heat to medium, pour the whisked egg over the balsam pear and shrimp meat, cook until the egg have set.

3. Remove to a plate and serve immediately.
