Egg Bitter Melon Pie
This scrambled egg pie features a terrific combination of the tangy bitter melon, and smooth egg. The nutritious pie can be eaten at any time of the day.

Cook time: 15 minutes
Utensils:
Wok, spatula, serving plate.
Serves 2
Ingredients:
2 raw eggs, beaten, whisked with pinch of salt in a bowl
2 slices fresh ginger
1 bitter melon, sliced well
1 tbsp. chopped scallion
1-2 tsp. salt, or to taste
2-4 tbsps. vegetable oil for stir-frying
Directions:
1. Preheat a wok over high heat for 1 minute before adding 2 tbsp. vegetable oil, heat until hot, and turn heat to medium, saute scallion and ginger slices until aromatic, about 20 seconds. Then cook sliced bitter melon until tender, spread them evenly around the wok.

2. Swirl the egg mixture over the sliced bitter melon evenly, cook them over medium high heat until egg have set. Then turn over and cook the other side, correct for salt when nears done.

3. Remove from the heat to a plate, serve hot.
