Garlic Sprouts with Egg Stir-fry Recipe

Wok, pot, spatula, colander, bowl, serving plate.
Serves 2
Ingredients:
7oz. / 200 g garlic sprouts, cut into 1-inch length pieces
2 large raw eggs, beaten, whisked lightly with pinch of salt in a bowl
4-5 cloud ears, soften by soaking in water for 20-30 minutes ahead of time
1 tbsp. chopped scallion
1 tbsp. light soy sauce, low-sodium
1 tbsp. salt, or to taste
2 tbsp. vegetable oil for stir-frying

Directions:
1. Bring a large pot of water to a boil, reduce to low heat, swirl into the egg mixture evenly, scramble until the egg have set, then drain well in a colander, place onto a plate then.

2. Preheat 2 tbsp. vegetable oil in a wok until hot, saute the chopped scallion briefly until aromatic, about 20-30 seconds, then cook garlic sprouts, sprinkling 1 tbsp. light soy sauce over them while cooking, stirring and tossing them around the wok until tender.

3. At last, add back the soaked cloud ears and cooked egg, taste and season with salt as desired, stir briefly to mix everything together.

4. Remove from the wok to a serving plate, and serve hot.

Tips:
1. At step 2, try not to pour the egg mixture into one place wholly, you'd better swirl it evenly around.
