Green Peas Carrot Egg Pie
This is a traditional Chinese egg pie, and it's an extremely tasty way to stretch eggs. Green peas carrot egg pie is really easy to make at home, and quite quick as well.

Cook time: 10 minutes
Utensils:
Wok, bowl, serving plate.
Serves 2
Ingredients:
1 raw egg
1/2 cup green peas
1/2 cup bacon cubes
1/2 -1 cup milk
1 carrot, washed
1 red pepper, chopped fine
1 tbsp. chopped scallion
1 tbsp. salt, or to taste
1 tbsp. ground black pepper
3 tbsps. vegetable oil, for stir-frying
Directions:
1. Beat the egg in a bowl, whisk lightly, then combine with milk, salt, and ground black pepper, mix well.
2. Cut the carrot into small cubes.
3. Preheat a wok over high heat until hot, about 1 minute, then heat 3 tbsps. vegetable oil until hot, saute scallion over medium high heat for 20 seconds until aromatic, then stir fry green peas and carrot cubes over high heat for about 1 minute.
4. Pour into the egg mixture, pan fry over medium high heat until golden, then add bacon cubes, cook until done.
5. Remove from the wok to a plate, serve hot.
