Tomato and Egg Stir-fry Recipe

Ingredients:
2 eggs, beaten, whisked lightly
2 tomatoes, peeled, cut into wedges
2 tbsps. vegetable oil for stir-frying

Directions:
1. Preheat a wok over medium-high heat for at least 30 seconds before adding oil, when hot, pour into the egg mixture, and scramble until quite firm, about 2 minutes, transfer to a plate for later use.

2. Put the tomato wedges back into the wok in question, stir fry over medium high heat, toss 3-5 tbsps. water as needed, then put on the lid and let cook until tomato soften, stirring occasionally.

3. At the last minute of cooking, add the cooked egg back into the wok, stir briefly to mix everything together.
4. Taste and season with salt as desired, serve hot on a plate.
