Chicory

Chicory is a hardy perennial herb with a long white root and blue-purple flowers; in the 1700s Chicory was brought into North America from European, and now it grows wildly across the continent. Chicory’s leaves are commonly added in salads along with other vegetables, which are green with a bitter taste, and the root of Chicory can be eaten as well. At the same time, Chicory is a perfect coffee substitution since Chicory has a chocolate flavor but it does not contain any caffeine. For this reason people tend to add its roasted root to coffee from long time ago.
