Chive
Chive is a green herb plant with thin and long leaves, which is similar to scallion or green onions. Alike its close relative's garlic, onions and leek, chive leaves is a great herb for flavoring food. Garlic chives and Siberian chives are the other two spices of chives. In Chinese cuisine, chive is primarily used raw as a garnish; it may also stir fried with eggs or other vegetables.

Fresh chives are available year – round in many supermarkets. You can buy freeze-dried chives also in markets.
Purchasing tips:
When purchase chives, select fresh chives that is uniform in size with green color, avoid any yellowed or wilted ones.
Storage:
Put unwashed chives into plastic bags and refrigerate it in the vegetable crisper, which will last for about 4 - 6 days.
Usage tips:
To make the most of the delicate onion flavor of chives, we recommend you to use them raw, or add it at the end of some dishes, or just before serving as a garnish. Chinese people typically add chopped chives into the fillings of dumplings or sprinkle chopped chives over a bowl of soup.
