Cinnamon is the brown inner bark of cinnamon tree, when it dries people rolls the tree bark into a tubular form, and then cut the quills into cinnamon sticks. Cinnamon comes in two types there are cinnamon sticks (the whole quill form) and ground cinnamon powder. Ceylon cinnamon (also referred to as “true cinnamon” ) and Chinese cinnamon (also known as “cassia” ) are the most common varieties consumed, while Ceylon cinnamon’s flavor is more fragrant and subtle, but Ceylon cinnamon is more rare in America than Chinese cinnamon-cassia. Cinnamon is widely served as a condiment and often used as spice in different cooking; it is seeing as the most popular spice in the world. Some people like to add cinnamon in desserts, such as liqueurs, pies, and hot cocoa, while others prefer to use cinnamon in savory dishes of chicken and lamb.
