Cornstarch is a kind of starch powder in white color which is derived from the corn. In Chinese cuisine, cornstarch is usually used to mix with water or other liquid to make a paste, then used it as a thickener to be added to stews, stir-fries and soups at the last stage of cooking, which will always result in juicy texture of dishes.
