Cucumber
The common cucumber is a kind of oblong, crunchy vegetable with tiny spines around, commonly with green color and has a mild flavor. Chinese cucumbers are quite different from the common ones as they have deep flavors, which ranges from mild to bitter with a variety of lengths and colors.

Purchasing tips:
When you purchase Cucumbers, select the deep green colored, well shaped firm ones. Avoid neither with wilt or soft spots cucumbers, which indicates spoilage, nor shriveled or puffy ones.
Storage:
Refrigerate cucumbers in the vegetable crisper in refrigerator for up to 1 week.
Preparation and Usage:
Peel the waxed cucumber with a peeler, and then scrub the tiny spines if desired. After that slice length wise in half, scoop out the seed with a spoon if desired. Ready for cooking.
