Scallion or Green Onions

Scallion, also known as green onions, or spring onions, are members of the onion genus Allium, which has a milder taste than other onions. Scallion usually has a long stalks that can range from white at the bottom to green on the top. As the unique taste and texture, green onions are served in a number of different ways in Chinese cuisine, usually chopped into small pieces and added raw to top salads or soups, grilled, or cooked with soups to add unique flavors.

Green onions tend to be very cheap, they are available year-round at most supermarkets and Asian stores.

 
Purchasing tips:
When purchasing, make sure the small roots are white and relatively firm, and the green top should be crispy, avoid any wilting or brown parts. Avoid buying too much at a time, as they can be wilted easily within 1 – 2 days.


Storage:
Store scallion in a plastic bag, seal well, then refrigerate in the vegetable crisper for 3 – 4 days.
