Sweet Bell Peppers
Sweet bell peppers are evenly sized with thick and juicy flesh and sweet flavor. They come into different colors, such as, green, red, yellow, and orange, which also indicates the stage of ripeness. The most common ones are green sweet bell peppers, which are fully developed but not ripe, however, red, orange, and yellow peppers are riper, and sweeter than the green ones.

Sweet bell peppers are available year-round in supermarkets and Asian markets.
Purchasing tips:
When choosing sweet bell peppers, select fresh and firm peppers that are bright in color. Avoid soft ones or with wrinkled skins or brown spots. Good sweet bell peppers should also feel heavy for it’s size.
Storage:
Place unwashed sweet bell peppers in plastic bags and keep in the refrigerator for 3 to 4 days. Mini peppers will keep up to two weeks or so.
Preparation and Usage:
Discard the stem, cut lengthwise into half, then remove the inner seeds with a spoon, cut into cubes or strips, you can eat them raw or stir fry with other ingredients for a main dish.
