Sweet Potato

Sweet potatoes are pointy-ended tubers with sweet flesh. “Yam” is the other name of sweet potato, which is orange in color and sweet-fleshed that you can easily find in the markets. Beauregard, the most common sweet potato, is uniform-sized and orangey skin as well as flesh. Sweet potatoes are staple in some Asian counries.

You can find sweet potatoes in the markets year-round.


Purchasing tips:
When purchasing, select the firm ones with smooth skins, avoid the wrinkled or sprouting yams.


Storage:
Do not refrigerate them, just store in a cool, and dark place, usually can keep less than one week.


Preparation and Usage:
You can either peel with a vegetable peeler before you cook or discard the skin after you have cooked. In China, people usually bake them whole with the skin on, peel as needed while eating.
