Chinese Deep Fried Meatballs Recipe

Serves 3
Ingredients:
1 raw egg, beaten, whisked lightly
17 oz./ 500 g ground pork
2 water chestnut, finely chopped, optional
1 tbsp. cornstarch
1 tbsp. chopped scallion
5 tbsps. vegetable oil
Seasoning A:
1/2-1 tbsp. sugar
1 tbsp. Chinese rice wine, or dry sherry
1-2 tbsp. light soy sauce
1 tsp. salt, or to taste
Directions:
1. In a big bowl, combine ground pork with water chestnut, egg cream, 1-2 tsp. chopped scallion, 1-2 tsp. cornstarch, and seasoning A, stir clockwise until it becomes like a paste.


2. Form the mixture into tiny balls of about 1-inch diameter.

3. Heat 5 tbsps. vegetable oil in a wok over high heat until shimmering on the bottom and very hot, but not yet smoking, deep fry each ball over medium heat until golden, then drain well in a colander or on kitchen papers.
4. Remove to a plate, when cool enough to handle, serve then.
