Crispy and Garlicky Sparerib Recipe
This garlicky sparerib deep-fry recipe features crispy and garlic-scented spareribs, and the spicy black pepper also add a subtle accent to it.

Serves 4
Ingredients:
1 egg white
9 oz. / 250 g spareribs
8 cloves garlic, sliced
5 tbsps. vegetable oil for deep-frying
1-2 tsps. cornstarch, mixed with 2-4 tsp. water
Marinade:
1 tbsp. salt
1 tbsp. cornstarch
1 tbsp. rice wine, or dry sherry
1 tbsp. light soy sauce
1 tbsp. ground black pepper
2 tbsps. vegetable oil
Directions:
1. Rinse the spareribs thoroughly through warm running water, drain well and chop into 1-2 inches pieces, then gently combine with all the marinade and garlic cloves in a mixing bowl, let marinate for 2-3 hours before cooking.

2. In a separate bowl, blend together 1 egg white and cornstarch water mixture,stirring to thicken.

3. Coat the marinated spareribs evenly with the sauce we made at the former step.
4. Heat 5 tbsps. vegetable oil in a wok until it is shimmering on the bottom, but not yet smoking, deep fry each spareribs until golden brown.

5. When cooked, drain them on kitchen papers and then place on a serving plate, let cool 5 minutes before serving.
