Ketchup Spareribs Recipe

Serves 2
Ingredients:
3 slices ginger
3 tbsps. ketchup
2 tbsps. olive oil
2 tbsps. white sugar, or to taste
7 oz./ 200 g spareribs, cut into 1-inch length
1 tbsp. rice vinegar
1 tbsp. salt, or to taste
2 tbsps. vegetable oil for stir-frying
1 tbsp. cornstarch, mixed with 4 tbsps. water in a bowl
Directions:
1. Combine the spareribs, 1 tbsp. salt, 2 tbsps. olive oil, and 3 slices ginger in a bowl, mix well and let marinate for about 20 minutes.

2. Preheat a wok over high heat for 30 seconds before adding 2 tbsps. vegetable oil, swirl the oil and coat both the sides and the bottom of the wok until the oil is hot, add marinated spareribs back into the wok.

3. Swirl into 3 tbsps. ketchup and 1/2-1 cup water, cover and let cook over medium heat for about 5 minutes, or until the spareribs are tender.
4. Add 2 tbsps. white sugar and 1 tbsp. rice vinegar, keep stirring, tossing gently once or twice.
5. Give the cornstarch and water mixture a stir, then swirl into the wok in question, stir quickly to thicken, stir briefly to mix everything together then.

6. Remove from the wok, serve hot.
