Meat Strips with Scallion Stir-fry Recipe

Serves 2
Ingredients:
7 oz./ 200 g pork, cut into thin strips
1 tbsp. chili bean sauce
1/2 stalk scallion, cut into thin strips
2 tbsps. light soy sauce
1 tbsp. cornstarch, mixed with 4 tbsps. water in a bowl
1 tsp. salt, or to taste
2 tbsps. vegetable oil for stir-frying
Directions:
1. Put pork strips in a bowl, whisk in 1 tsp.salt and 1 tbsp.cornstarch, mix well and let sit for 10 minutes.
2. Place a wok over medium heat, add 2 tbsps. vegetable oil and drizzle to coat both the sides and the bottom of the wok, cook the pork strips just until the color turns white, do not brown.

3. Push the meat to the side of the wok, add 1 tbsp. chili bean sauce into the middle, stir fry over medium heat until aromatic, about 30 seconds.

4. Stir together over medium heat until blended well.

5. Swirl in the cornstarch and water mixture into the wok, stir quickly to thicken.
6. Remove from the wok to a plate, sprinkling with scallion strips before serving.
