Pork Tomato Sauce Recipe
This is Chinese most famous recipe, here the juicy pork tenderloin are perfect with the tangy tomato and onion cubes.

Serves 2
Ingredients:
7 oz./ 200 g pork tenderloin, cut into thin strips
3 tomatoes, cut into wedges
3 fresh mushrooms, quartered
1 onion, peeled, cut into small cubes
1 tbsp. chopped scallion
1 tbsp. rice wine, or dry sherry
1 tbsp. ground black pepper
1 tsp. salt, or to taste
4 tbsps. vegetable oil, for stir-frying

Directions:
1. In a big mixing bowl, combine pork tenderloin strips, 1 tbsp. ground black pepper, and 1 tsp. salt together, mix them well and let marinate for 15 minutes before use.
2. Peaheat a wok over medium-high heat for at least 30 seconds before adding oil, when oil is hot, sear pork tenderloin strips until no pink shows, about 4 minutes, then transfer to a plate for later use.
3. Add 2 tbsps. vegetable oil in the same wok, saute chopped scallion and onion cubes briefly until aromatic, about 30 seconds, do not brown.
4. Add mushrooms, stir fry for 1-2 minutes over medium heat before adding seared pork back, stir into 1 tbsp. rice wine as you stir fry.
5. At last, add tomatoes, pour into 1/2-1 cup water to cover, turn heat back to high and bring to a boil, then reduce to simmer until tomatoes soften, which will take about 10 minutes or so.

6. Remove from the wok to a plate, serve hot.
