Red-cooking Spareribs
This hearty and tasty Chinese red-cooking spareribs recipe features a terrific combination of crispy spareribs and tangy rape. And also this traditional recipe is simple to master and perfect for any party.

Ingredients:
7 oz./ 200 g spareribs
5-6 slices ginger
1 star anise
1 stalk scallion, cut into sections
3 stalk rape
1-2 cups chicken stock
1-2 tbsps. light soy sauce
1-2 tbsps. Chinese cooking wine, or dry sherry
5 tbsps. vegetable oil for deep-frying, or more as needed

Directions:
1. Heat 5 tbsps. vegetable oil in a wok until shimmering on the bottom, and very hot, but not yet smoking.
2. Deep fry spareribs over medium high heat until golden-brown, then drain well and set aside.

3. Pour off all but 1 tbsp. oil from the wok, saute ginger slices, scallion, star anise briefly until aromatic, which will take about 30 seconds, then add 1-2 cups chicken stock, stir into 1-2 tbsps. light soy sauce.
4. Add spareribs back, reduce heat to low and let simmer for about 40 minutes, or until the sauce reduced.
5. Stir into 1-2 tbsps. Chinese cooking wine, keep simmer until the sauce reduced.
6. Blanch rape in boiling water for 1 minute, or until turn into jade green, drain them well and arrange on a serving plate.
7. Drain the spareribs well and then arrange on the plate in question, serve hot.
