Sausage Sauerkraut Stew Recipe
This extremely basic sauerkraut sausage stew recipe lets the sausage be the star. And the sour sauerkraut add a subtle accent to this delicious sausage recipe.

Serves 2
Ingredients:
1 onion, peeled and thinly sliced
5 tbsps. sauerkraut, shredded fine
1 bunch scallion, finely chopped
1-2 Chinese sausage, cut into 1-inch sections
2 red hot peppers, remove seeds and ribs, cut into small pieces
1 cup chicken stock
2 crushed garlic cloves
1 tsp. salt, or to taste
2 tbsps. vegetable oil for stir-frying
Directions:
1. Preheat a wok over high for 1 minute before adding 2 tbsps. vegetable oil, heat until hot, then saute garlic cloves until aromatic, about 20 seconds, do not brown, then add onion shreds and Chinese sausage.

2. Put sauerkraut shreds and red hot peppers into the wok, pour into 1 cup chicken stock, bring to a boil, then reduce heat to low and simmer uncovered for about 30 minutes.

3. Sprinkle chopped scallion over evenly, taste and season with salt as needed.
4. Remove to a serving plate and serve hot.
