Crispy Spareribs Recipe

Ingredients:
1 red pepper, seeded, diced
3 green peppers, seeded, diced
3 garlic cloves, crushed
25 oz./ 700 g spareribs, chop into 2-inches sections
1 tbsp. ground black pepper
1 tbsp. chicken essence
1 tsp. salt, or to taste
5 tbsps. vegetable oil for deep-frying

Marinade:
1 tbsp. white sugar
1 tbsp. light soy sauce
1 tbsp. chicken essence
1 tbsp. flour
1 tsp. salt, or to taste
Directions:
1. In a big mix bowl, combine the spareribs with the marinade, mix well and let them marinate for 30 minutes.
2. In a wok, heat 5 tbsps.vegetable oil until shimmering on the bottom, but not yet smoking, deep fry marinated spareribs over medium heat until golden-brown.

3. Drain them well in a colander and dry on kitchen papers, then place on a plate.
4. Pour off the excess oil, leaving about 2 tbsps. vegetable oil in the wok, saute garlic briefly until aromatic, about 20 seconds, then add geen pepper and red pepper cubes, cook over medium heat until soften, whisk in 1 tbsp. ground black pepper and 1 tbsp. chicken essence as you stir fry, cook briefly to mix everything together.

5. At last, add the cooked spareribs back into the wok in which it was cooked, stirring, tossing once or twice until well mixed.
6. Taste and season with salt, serve hot.
