Sweet Sour Pork Recipe

Serves 3
Ingredients:
1/2 cup bear
1 carrot, sliced
10 oz./ 300 g pork
4 garlic cloves, sliced
1 green pepper, cut into cubes
1 tbsp. chopped scallion
1 tbsp. freshly grated ginger root
4 tsps. sugar
2 tbsps. cornstarch
2 tbsps. rice vinegar
1 tbsp. light soy sauce, low-sodium
1 tsp. salt, or to taste
5 tbsps. vegetable oil for deep-frying

Directions:
1. Cut the pork into 1/2-1 inch cubes, combine with 2 tbsps. cornstarch, 1 tsp. salt, and 1/2 cup bear in a mixing bowl, stir to mix well and let them marinate for 20 minutes.

2. Place a non-stick skillet over high heat, heat 5 tbsps. vegetable oil until hot, deep fry marinated pork cubes for 1-2 minutes, or until golden, drain well in a colander and set aside for later use.

3. Pour off all but 2 tbsps. vegetable oil from the skillet, then stir fry the carrot slices for 1 minute, when cooked, transfer to a plate for later use.
4. Add scallion, ginger, and garlic into the skillet in question, saute until aromatic, about 20 seconds, then add 2 tbsps. rice vinegar, 1 tbsp. light soy sauce and 4 tsp. sugar.

5. Put golden pork cubes, carrot slices and green pepper cubes back into the skillet, stirring and tossing to mix everything together.
6. Remove from heat to a serving plate, serve hot.
