Sweet Sour Spareribs Recipe
This sweet sour spareribs recipe features juicy and meaty spareribs, enhanced with a thick sweet and sour sauce. If you want something simple and delicious, give this a try.

Ingredients:
1 cup flour
10 oz./ 300 g spareribs
1 tbsp. chopped scallion
1 tbsp. Chinese rice wine, or dry sherry
1 tsp. salt, or to taste
1 tbsp. cornstarch, combine with 4 tbsps. water in a bowl
5 tbsps. vegetable oil for deep-frying
Seasoning A:
2-3 cups water
1-2 tsp. sugar
1 tbsp. rice vinegar
1 tbsp. light soy sauce
1 tbsp. Chinese rice wine, or dry sherry
Directions:
1. In a separate bowl, combine spareribs gently with 1 tbsp. Chinese rice wine and 1 tsp. salt, mix well and let them marinate for 30 minutes.
2. Coat each sparerib evenly with flour in another bowl.

3. Heat 5 tbsps. vegetable oil in a wok until shimmering on the bottom and very hot but not yet smoking, deep fry each coated sparerib over high heat until lightly browned. Drain well and deep fry again over high heat until golden, remove to a plate then.


4. Pour off all the oil from the wok, add seasoning A, then stir into cornstarch and water mixture, stir to thicken.

5. Add the deep-fried spareribs back into the wok in which it was cooked, stir to mix everything together.

6. Dish out onto a plate, top with a sprinkling of the chopped scallion before serving.
