Beer Chicken Stew Recipe

Serves 2
Ingredients:
500 g / 18 oz. chicken
1/2 onion, skinned, sliced thin
2 slices ginger, minced
2 tbsps. light soy sauce
2 stalks cilantro, rinse well
2 cups beer
1 tbsp. salt, or to taste
2 tbsps. vegetable oil for stir-frying

Directions:
1. Rinse chicken well through cold running water, then chop into 1-inch chunks, , put into a big mixing bowl, marinated with 2 tbsps. light soy sauce, and 1 tbsp. salt for about 20 minutes.
2. Preheat a wok over medium high heat for about 30 seconds before adding 2 tbsps. vegetable oil, heat till hot, then saute ginger and onion slices until aromatic, put back chicken into the wok, continue to cook until white.

3. Pour into 1 cups beer, bring to a boil over high heat, then reduce heat to simmer with the lid on for another 15 minutes.

4. Remove to a plate, sprinkle with cilantro if desired.
