Black Mushroom Chicken Stew Recipe
This chicken with black mushroom stew recipe is simple to master and quick to make, and it features the soft-textured chicken and juicy black mushroom.

Serves 2
Ingredients:
3 asparagus, rinse well and cut into sections
1 chicken leg, chop into chunks
10 dried black mushrooms
3 slices ginger
2 tbsps. chopped scallion
1 tbsp. Chinese rice wine, or dry sherry
1 tsp. salt, or to taste

Directions:
1. Soak the dried black mushrooms in warm water, about 20 minutes, then trim off the stems, cut into half.

2. Add enough water (about 2-3 cups) in a wok, add chicken, ginger slices, and 1 tbsp. Chinese rice wine, cook over high heat until boiling.
3. When boiling, add mushrooms. Add asparagus when boils again.
4. Bring all of them to a boil again, then reduce heat to low and simmer for another 30 minutes, or until the chicken has set.

5. Season with salt when nears done, ,mix well and remove to a bowl, sprinkling with chopped scallion before serving.
