Tasty Chicken Kelp Recipe

Serves 2
Ingredients:
7oz. / 200 g chicken breast, thinly shredded
7oz. / 200 g kelp, cut into thin strips
2 red peppers, seeded, cut into thin strips
1 tbsp. grated ginger root
1 tbsp. chopped scallion
1 tbsp. cornstarch, mixed with 4 tbsps. water in a bowl
2 tbsps. vegetable oil for stir-frying

Marinade:
1 tsp. salt, as needed
1 tbsp. cornstarch, mixed with 4 tbsps. water
Directions:
1. Gently combine chicken breast shreds with the marinade in a mixing bowl, let marinate for 20 minutes.
2. Blanch red pepper strips in boiling water for 30-60 seconds, drain well in a colander and set aside.

3. Preheat a wok over medium heat for 1 minute, then stir fry chicken breast shreds with 2 tbsps. vegetable oil just until chicken turns white, do not brown, then transfer to a plate and set aside for later use.

4. Saute scallion and ginger with the remaining oil in the wok in question, when the scallion begins to sizzle, and before it starts to brown, add the cooked chicken breast shreds, red pepper, and kelp strips, stirring and tossing over medium heat for about 3 minutes, at the last minute of cooking, stir into cornstarch and water mixture, stir to mix everything together.

5. Remove from the wok to a plate, serve hot.
