Chicken Wings and Chestnuts Stir-fry Recipe
One of the most famous Chinese food – chicken wings and chestnuts stir-fry recipe, which combines the crispy chestnuts, and meaty chicken wings together, really tasty and refreshing.

Utensils:
Wok, pot, 3 bowls, serving plate.
Serves 2.
Ingredients:
1 cup water
6 raw chicken wings
7oz. / 200 g chestnut, peeled
5 dried black mushrooms
1 tbsp. chopped scallion
2-4 cloves garlic, crushed
2 tbsp. minced fresh ginger
3 tbsp. vegetable oil for stir-frying
1 tbsp. freshly chopped cilantro leaves
1/2 tbsp. cornstarch, mixed with 1/2 cup water in a bowl
Marinade:
1 tbsp. honey liquid
1 tbsp. cornstarch
1 tsp. white pepper
1/2 tbsp. light soy sauce
1 tbsp. rice wine, or dry sherry
Seasonings:
1 tbsp. oyster sauce
1 tsp. salt, or to taste
Directions:
1. Rinse chicken wings thoroughly through running water, pat dry, chop into 1-inch pieces, then combine with the marinade and 2 tbsp. minced fresh ginger in a mixing bowl, let them marinate for about 15 minutes.

2. Soften the dried black mushrooms by soaking in warm water for 20-30 minutes, then squeeze out any extra water, trim off the stems, cut into thin strips.

3. Bring a large pot of water to a boil, cook chestnuts over medium high heat for 15 minutes, drain well and set aside for later use.
4. Preheat 3 tbsps. vegetable oil in the wok until hot, saute crushed garlic cloves briefly until aromatic, about 20 seconds, put back black mushrooms and chicken wings and cook over medium high heat for 2 minutes.
5. Add chestnuts back into the wok in question, cook for about 1 minute, pour into 1 cup water, cover and then bring to a boil, then reduce the heat and let simmer for another 30 minutes.

6. When cooked, add 1 tbsp. oyster sauce, season with salt if necessary.
7. Swirl the cornstarch and water mixture into the wok, cook briefly to thicken and mix everything together, sprinkling with chopped scallion and a few sprigs of fresh cilantro leaves before serving.

8. Remove from the wok to a serving plate, serve hot.
