Chicken Wings with Potato Stew Recipe
This chicken wings with potato stew recipe is perfect in summer, especially for a party with your family or friends.

Serves 2.
Ingredients:
2 potatoes, peeled
8 chicken wings
2 slices ginger
2 tbsp. chopped scallion
1 tsp. salt, or to taste

Marinade:
1 tbsp. rice wine, or dry sherry
1 tbsp. light soy sauce
1 tbsp. Szechuan peppercorn
Directions:
1. Rinse the chicken wings through running water, then combine with the marinade in a bowl and marinate for about 2 hours.

2. Cut the potato into small cubes.

3. Place a wok over high heat, preheat for about 2 minutes before you add 2 tbsps. vegetable oil, then stir fry marinated chicken wings over medium high heat for about 1-2 minutes.

4. Add chopped scallion, ginger, 1 tsp. salt, 1/2 cup water, potato cubes back into the wok, cook over high heat for 2 minutes, then reduce to medium heat and stew until cooked, which will take about 15 minutes.

5. Stop cooking when the potato softens and sauce reduces, then remove from the wok to a plate, serve hot.
