Scallion-scented Lamb Stir-fry Recipe

Serves 2
Ingredients:
7 oz. / 200 g lamb
3 stalks scallion
1 tbsp. Chinese cooking wine, or dry sherry
1 tbsp. light soy sauce
1 tsp. salt, or to taste
1 tbsp. ground black pepper powder
1 tbsp. sesame oil
1 tbsp. rice vinegar
3 tbsps. vegetabel oil for stir-frying
Directions:
1. Cut scallion into sections according to the picture.

2. Cut lamb into thin slices according to the picture.

3. In a big bowl, combine lamb slices with half amount of the scallion, Chinese cooking wine, light soy sauce, salt, ground black pepper powder, and sesame oil, mix well and let them marinate for 1-2 hours.

4. Preheat a wok over high heat for 1 minute before adding 3 tbsps. vegetabel oil, heat until hot, then add marinated lamb slices, stir fry over high heat for 1 minute.

5. Add the rest of the scallion, keep stirring until cooked.

6. Dish out and serve.
